Ingredients
Cupcakes
- 1 1/4 cups all-purpose flour
- 3/4 cups whole wheat flour
- 1/4 cup sugar
- 1/4 cup brown sugar packed
- 3 Tbsp. cocoa powder unsweetened
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cups milk fat-free
- 3/4 cups applesauce unsweetened
- 1 Tbsp. canola oil
- 1 Tbsp. molasses
- 2 Tbsp. balsamic vinegar
- 1 tsp. vanilla extract
- 1/3 cup chocolate chips mini
Garnish
- 1 bucket cotton candy
Instructions
Cupcakes
- Preheat oven to 350°F.
- Line about 18 2.5" muffin cups with cupcake liners.
- In a bowl, combine flours, sugars, cocoa powder, baking soda, and salt.
- In another bowl, combine milk, applesauce, oil, molasses, balsamic vinegar, and vanilla extract.
- Mix wet mixture into dries. Stir just until moistened, batter should be lumpy.
- Stir in half of the chocolate pieces.
- Spoon batter into prepared muffin cups, filling each cavity just over halfway. Divide remaining chocolate between tops of cupcakes.
- Bake for 15 minutes.
Assembly
- Once cupcakes are cool, use a butter knife to create a cavity in each one. Cut about halfway into cupcake.
- Pinch off a large piece of cotton candy to fill each cupcake.
