Recipe of the Week: Oversize Blueberry Muffins
If you plan on making 2015 the year of “more,” then why not apply the same thinking to the size of your desserts? While we’re not promoting a full-on “supersizing” frenzy, making your occasional indulgences bigger can certainly enhance the experience. This Rosmerta’s Recipes feature was inspired by Mrs. Weasley’s attempt to get Harry to eat something before his hearing at the Ministry and cooked up by Renee of the Leafy Cauldron. As an added bonus, like most of her recipes, this one is both vegan-friendly and gluten-free, which lessens some of the guilt associated with the sizes of these treats.
Renee, who originally set out to put a vegan spin on many of the selections in Dinah Bucholz’s The Unofficial Harry Potter Cookbook, came across these muffins when reading Harry Potter and the Order of the Phoenix. On the morning of Harry’s disciplinary hearing at the Ministry of Magic, Harry is anxiously preparing to leave Grimmauld Place when Mrs. Weasley insists that he must eat breakfast. Harry somewhat reluctantly selects toast, but in the end, he is far too nervous and preoccupied to actually eat it.
Baked with fresh blueberries, a bit of lemon juice, and non-dairy vanilla milk, these muffins pack a delightful crunchy topping that is guaranteed to slow down even the busiest of mornings for a few moments of breakfast bliss. They also make a magical “anytime” dessert. When are you feeling peckish? Lunch? Dinner? Close to that afternoon slump? Whenever. It doesn’t matter. Wrap them, pack them, and then be off on your day knowing that these are sure to fill you up. Just don’t go overboard… We suspect a food coma might be around the corner if you’re not too careful!
