Recipe of the Week: Rum Butterbeer Cookies
Despite butterbeer’s availability should you decide to mosey on over to the Wizarding World of Harry Potter, it remains one of the most customized and adapted recipes by fans of the series. This might have to do with the idea that it’s far more exciting to project our own interpretations of the flavor in our kitchens.
This week’s featured chef, Renee from the Leafy Cauldron, points out that throughout the series several characters are shown enjoying this beverage in their own unique ways. For instance, Hermione prefers to add a bit of ginger, and Winky the house-elf quickly gets intoxicated as a result of excess consumption. J.K. Rowling provided some insight into the taste, stating that it was reminiscent of slightly “less-sickly butterscotch.”
With this in mind, Renee maintained three crucial elements to her recipe: slight use of butterscotch, the addition of spices, and a bit of rum flavoring. The result is these sweet and buttery vegan sandwich cookies with a rich butterscotch filling and a light butterscotch sauce to top it all off. These cookies are taken one step further with the addition of pumpkin to enhance coloring. The generous use of spices (nutmeg, cinnamon, ginger, and vanilla) adds another layer of pleasantly surprising taste. The end result is delicious Rum Butterbeer Cookies.
